The name comes from the Ilocano 'pinakebbet', 'shriveled': the vegetables wilt in their own juices with bagoong monamon, fermented anchovy paste. In Ilocos the pot is never stirred; it is lifted and swirled in circles so the eggplant, okra and ampalaya stay whole. The southern Tagalog version adds squash and uses shrimp paste, but the Vigan one remains the benchmark.

How it is made

  1. Saute the tomatoes in the pot until they release their juices.
  2. Dissolve the bagoong monamon in half a cup of water and pour it in.
  3. Layer the vegetables: squash on the bottom, then ampalaya, okra, eggplant and sitaw on top.
  4. Simmer covered over low heat without stirring; lift and swirl the pot in circles instead.
  5. When the vegetables are al dente, add the chopped bagnet and serve with rice.
