Malay satay reached Zamboanga with traders from Borneo and the Sulu islands, and stayed with a name of its own. Satti houses open at dawn: three beef or chicken skewers drenched in a spicy orange annatto sauce thickened with rice, alongside a puso, rice steamed in a woven coconut-leaf pouch.

How it is made

  1. Season the meat, shape long skewers and grill over charcoal, basting with the sauce.
  2. Fry annatto in oil, add broth, crushed chilies and the dissolved rice flour.
  3. Simmer the sauce until it thickens to a thin gravy.
  4. Drench the skewers in sauce; in Zamboanga it comes almost soupy.
  5. Serve with puso or white rice, hot, at breakfast.
