Tam means to pound: the green papaya is bruised in the mortar together with the dressing so it drinks it in. The salad was born in Laos and Isan with fermented river crab (poo) and no peanuts; the central Thai version added dried shrimp and more sugar. It conquered Bangkok to the point of becoming one of the country's most-ordered dishes, held up by the exact balance of sour, hot, salty and sweet. If the heat is too much, ask for mai pet.

How it is made

  1. Pound the garlic and chilies in the mortar into a paste.
  2. Add the palm sugar, fish sauce and lime; stir until the sugar dissolves.
  3. Add the tomatoes and dried shrimp, bruise lightly, then add the papaya.
  4. Pound with the mortar while turning the mix with a spoon, so the papaya soaks up the dressing.
  5. Adjust the sour-hot-salty-sweet balance, finish with the peanuts and serve at once with sticky rice.
